Global Idea Exchange organised a competition whose main aim is to explore different ideas to improve cities. Concretely, Berta Jimenez (a trained mechanical engineer) and a friend decided to address this competition through an Industrial Symbiosis processes. They have noticed the increasing number of microbreweries in New York City and the millions of tons of the stuff of the beer-making process that was discarded, even its high nutritional value. Thus, they decided to create a company for the reduction of food waste, concretely, beer industry at the moment and its main by-product that’s called spent grain. They have developed a process in which they make it into flour that’s high protein, high fibre and low in carbohydrates. In cities, 85% of the time they send it to a landfill.
